Roasted Vegetables

Ingredients
  1. Vegetables of Choice, chopped
  2. Onion, chopped
  3. Garlic, (either whole or minced)
  4. Oil
  5. Fresh Ground Black Pepper
  6. Sea Salt
  7. Other spices
Instructions
  1. Toss vegetables in a bowl with a small amount of olive oil (or other oil), onion, garlic and spices. Put in a baking dish.
  2. Bake at 350 until tender and lightly browned.
Notes
  1. Try all root vegetables, like carrots, turnips, and beets (just don't eat them too often).
  2. Try broccoli, cauliflower, or mix summer squashes. Get creative.
  3. You can also opt to put the vegetables in tin foil, seal tightly, and cook in oven that way for a more steamed vegetable.
  4. Add whatever spices you want.
  5. Thyme is always good.
