Puréed Sweet Potato

Use this in place of mashed potatoes. Great for the holidays, too!

Ingredients
  1. 4 Sweet Potatoes, chopped into large pieces (leave skins on!)
  2. Unsweetened Coconut Milk
  3. Butter or Ghee (optional)
  4. Fresh Ground Nutmeg
  5. Fresh Ground Black Pepper
  6. Sea Salt
Instructions
  1. Boil in a Medium Saucepan until tender.
  2. Strain and put in a Food Processor.
  3. Add butter and small amount of Coconut Milk.
  4. Puree until desired consistency.
  5. Season to taste.
Notes
  1. This one I tend to keep simple, because the sweet potato already has such great flavor. Sometimes I use nutmeg, sometimes I don't. But I tend not to stray too much from it. Keep it simple.
