Puréed Cauliflower

This is a great substitute for mashed potatoes.

Ingredients
  1. 1 Head of Cauliflower, chopped into large pieces
  2. Unsweetened Coconut Milk
  3. Butter or Ghee (optional)
  4. Fresh Ground Black Pepper
  5. Sea Salt
Instructions
  1. Steam Cauliflower until tender.
  2. Put it in a Food Processor.
  3. Add butter and small amount of Coconut Milk.
  4. Puree until desired consistency.
  5. Season to taste.
Notes
  1. This one you can get really creative with and make a wide variety.
  2. You can add almost any spice you would like to this.
  3. Try a little Nutmeg or fresh Thyme.
  4. You can also add things like reconstituted sun dried tomatoes, or even nuts like almonds or pecans.
  5. If you want to add onions or garlic to this, just sauté in a pan until tender or caramelized and add to Food Processor when ready.
