Grilled Vegetables

I grill veggies, especially squash all summer long.

Ingredients
  1. Vegetables of Choice, chopped or sliced thin.
  2. Onion, chopped
  3. Garlic, (either whole or minced)
  4. Oil
  5. Fresh Ground Black Pepper
  6. Sea Salt
  7. Other spices
Instructions
  1. Toss all ingredients in a bowl with a small amount of olive oil (or other oil).
  2. Put on grill, turning once until tender and lightly browned.
Optional
  1. You can also opt to put the vegetables in tin foil, seal tightly, and cook on grill that way for a more steamed vegetable. You could even add a cedar chip to it for flavor!
Notes
  1. Try all root vegetables, like carrots, turnips, and beets (just don't eat them too often).
  2. Try broccoli, cauliflower, or mix summer squashes. Get creative.
  3. Add whatever spices you want. Thyme is always good.
