Mini Quiche

Simple easy recipe that can be used for several meals.

Ingredients
  1. 6 Organic Eggs (or more depending on how many you want to make. Figure 1.5 eggs per serving)
  2. Vegetables of your choice (try onion, bell pepper, asparagus, etc.)
  3. Cheese (optional)
  4. Fresh Ground Black Pepper
  5. Sea Salt
  6. Other Seasonings if desired
Instructions
  1. Preheat oven to 350 degrees.
  2. Whisk eggs in a bowl and add seasonings.
  3. Place vegetables in a cupcake pan (lined with cupcake wrappers).
  4. Pour egg mixture over vegetables until wrapper is almost full.
  5. Place in oven and allow to cook until egg is cooked through.
  6. If the egg mixture jiggles, it's not done yet. You can use a toothpick to test it. If it comes out clean, it is done.
  7. Allow to cool and serve.
  8. Refrigerate leftovers and take them as to go breakfasts for several days!
Notes
  1. Use your leftover veggies for this!
  2. You can use any combination of spices, veggies, whatever in this!
  3. You can also add bacon, ham, or any meat you desire.
