Taco Salad

Growing up in New Mexico, I love anything chili. This is one of my favorite meals.

Ingredients
  1. 1 Lb. Ground Beef
  2. 1 Onion, chopped
  3. Taco Seasoning (see recipe)
  4. Romaine lettuce, washed and broken into bite size pieces
  5. Cherry Tomatoes
  6. Red Bell Peppers, chopped
  7. Green Onions, chopped
  8. Grated Cheddar Cheese (optional)
  9. Fresh Cilantro, chopped (optional)
  10. Tomato Salsa, Tomatillo Salsa, and/or Jalapeno Ranch (see Recipes)
Instructions
  1. Brown onion and Ground Beef in skillet.
  2. Add Mexican Spice blend with a little bit of water
  3. Simmer until it cooks down.
  4. Let cool.
  5. Mix all other ingredients together, or layer them (make a 7 layer salad with this!).
  6. Place in a bowl or on a plate.
  7. Spoon meat mixture on top of salad
  8. Pour Salsa or Jalapeno Ranch dressing over it.
  9. Enjoy!
Notes
  1. If you like sour cream, you can use unsweetened plain yogurt instead.
  2. You can add other veggies as well. Traditionally, this would have corn and black or pinto beans in it as well, but I leave those out. Occasionally, I add fresh Jalapenos.
  3. You could also make tacos by wrapping the ingredients in Romaine Leaves instead of a Tortilla.
